Ingredients
  

  • 1 pound breakfast sausage or chorizo
  • 8 large eggs
  • 6 medium flour tortillas whole or chopped
  • 1 cup salsa mild, medium, or spicy
  • 2 cups shredded cheese cheddar or Mexican-style blend
  • ¼ cup milk optional
  • 1 tablespoon butter for cooking eggs, if scrambling
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin

  • Sour cream
  • Green taco sauce

Method
 

  1. Preheat the oven to 375°F and lightly grease a baking dish.
  2. Cook the sausage in a skillet over medium heat until browned, breaking it apart as it cooks. Drain excess grease and set aside.
  3. Prepare the eggs by either lightly scrambling them or whisking them with milk, salt, pepper, chili powder, and cumin.
  4. Assemble the casserole by spreading salsa on the bottom of the dish, followed by sausage, tortillas, egg mixture, and cheese.
  5. Bake uncovered for 25–35 minutes, until the center is set and the top is lightly golden.
  6. Rest for 5–10 minutes, then slice and serve with optional toppings.
