Ingredients
  

  • 1 lb 450g ground chicken (93% lean recommended)
  • ¾ cup Italian breadcrumbs
  • ½ cup grated parmesan cheese
  • ¼ cup milk
  • 1 large egg
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tbsp fresh parsley finely chopped
  • ¾ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil for brushing
  • ½ cup shredded mozzarella optional topping
  • ½ cup marinara sauce optional

Method
 

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish or loaf pan.
  2. In a large bowl, combine ground chicken, breadcrumbs, parmesan, milk, egg, garlic, oregano, parsley, salt, and pepper.
  3. Mix gently until just combined. Do not overmix.
  4. Shape into 4 mini loaves or form 1 large loaf in the prepared pan.
  5. Brush the top lightly with olive oil.
  6. Bake at 375°F for 25–30 minutes (mini loaves) or 45–55 minutes (large loaf).
  7. Cook until internal temperature reaches 165°F (74°C).
  8. During the last 5 minutes, top with shredded mozzarella if using.
  9. For a sauced version, spoon warmed marinara over the loaf and bake 5–10 more minutes.
  10. Remove from oven and let rest 5–10 minutes before slicing.
