Ingredients
  

  • 1 ½ lb boneless skinless chicken breasts
  • 2 cans 15 oz each white beans (Great Northern or Cannellini), drained and rinsed
  • 2 cans 4 oz each diced green chilies
  • 1 medium white or yellow onion diced
  • 3 cloves garlic minced
  • 1 cup frozen or canned corn
  • 4 cups low-sodium chicken broth
  • 1 tsp chili powder
  • 1 ½ tsp ground cumin
  • 1 tsp dried oregano
  • ¾ tsp salt
  • ½ tsp black or white pepper
Optional Ingredients
  • 1 –2 fresh jalapeños sliced
  • 2 tbsp masa harina mixed with ¼ cup milk
  • Juice of 1 lime
  • ½ cup shredded Monterey Jack cheese

Equipment

  • slow cooker (6-quart recommended)
  • Cutting board

  • Measuring cups and spoons
  • Two forks (for shredding chicken)

Method
 

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add beans, onion, garlic, green chilies, corn, and all seasonings on top of the chicken.
  3. Pour in the chicken broth until ingredients are just covered.
  4. Cover and cook on low for 6–8 hours or high for 3–4 hours, until chicken is tender.
  5. Remove the chicken, shred with two forks, and return it to the crockpot.
  6. If using, stir in masa mixture and cook for 15–20 minutes to thicken.
  7. Finish with lime juice or cheese if desired, then taste and adjust seasoning before serving.
