Trim excess skin or fat from the chicken thighs if desired and place them in an even layer in the crock pot.
In a bowl, whisk together honey, soy sauce, garlic, hoisin or sweet chili sauce, and any optional ingredients used.
Pour the honey garlic sauce evenly over the chicken, making sure all pieces are coated.
Cover the crock pot and cook on low for 6–7 hours or high for 4–5 hours.
Check that the chicken reaches 165°F internal temperature before serving.
Garnish with green onions and sesame seeds. Thicken sauce if desired before serving.
