Ingredients
  

  • lb bone-in skin-on chicken thighs (about 6 pieces)
  • ½ cup honey
  • 4 cloves garlic minced or pressed
  • cup soy sauce
  • ¼ cup hoisin sauce or sweet chili sauce
  • 1 tsp sesame oil optional
  • 1 tbsp brown sugar optional
  • 1 tbsp Dijon mustard optional
  • 1 tbsp lemon juice or rice vinegar
  • ½ tsp salt adjust based on soy sauce
  • ½ tsp black pepper
  • 2 green onions sliced (for garnish)
  • 1 tbsp sesame seeds for garnish
  • 2 cups potatoes or sliced onions optional add-in

Method
 

  1. Trim excess skin or fat from the chicken thighs if desired and place them in an even layer in the crock pot.
  2. In a bowl, whisk together honey, soy sauce, garlic, hoisin or sweet chili sauce, and any optional ingredients used.
  3. Pour the honey garlic sauce evenly over the chicken, making sure all pieces are coated.
  4. Cover the crock pot and cook on low for 6–7 hours or high for 4–5 hours.
  5. Check that the chicken reaches 165°F internal temperature before serving.
  6. Garnish with green onions and sesame seeds. Thicken sauce if desired before serving.
